Yield: 8 Sandwiches
While barbecuing never gets old, eating the same dishes every week certainly does. How would you like a recipe that will spruce up your repertoire while still retaining the wonderful barbecue flavors we all love this time of year? Introducing… Grilled Chicken Pita Pockets! Yes, it is a bit more work, but certainly worth the effort!
Grilled Chicken:
8 medium chicken cutlets, sprinkled with salt and pepper and grilled and cut into cubes
6 oz. pastrami, diced
1 onion, diced
2 Tbsp. oil
Sauce:
½ cup orange juice
1 1/3 cup brown sugar
2 Tbsp. mustard
2 Tbsp. soy sauce
Directions:
In a large skillet, heat oil on medium heat. Add the diced onion and saute until golden. Add the chicken and the pastrami and stir until heated through.
In a small bowl, whisk the sauce ingredients to combine. Pour into skillet and stir to incorporate the flavors. Allow the ingredients to cook for approximately 10 minutes.
Serve with pita, wraps, buns, or club bread and top with vegetables of your choice. Enjoy!
