Irresistible Chicken Skewers

Yield 12-15 Skewers

How to trick your children (and yourself) to eat their veggies? Thread it onto a skewer! What happens when you sneak pieces of chicken in there, and slather it in your favorite barbecue sauce? Walla! It’s a meal on a stick! The best part of this recipe is that it can be thrown on the outdoor barbecue or baked in your indoor oven for equally scrumptious results.

Time to dig in!

Skewers:

6 pieces of boneless chicken breast, cubed
1 cup multi-colored grape tomatoes, halved
1 cup pearl onions, peeled
1 cup button mushrooms
1 zucchini, sliced into thin rounds
1 yellow squash, sliced into thin rounds
 

Sauce:

 ¼ cup oil
1/2 cup barbecue sauce (your favorite brand)
 ¼ teaspoon garlic powder
 ¼ teaspoon onion powder
 ¼ teaspoon salt
 ¼ teaspoon smoked paprika

 

 Directions:

Whisk the sauce ingredients in a small bowl until well combined.

Place chicken cubes in a shallow pan. Pour the sauce over the chicken cubes and refrigerate for several hours or overnight.

When ready to assemble, create a pattern on the skewer. Start with a piece of chicken, slide on one piece of each vegetable, and repeat the pattern until you are about ½ inch from the top.

If using an outdoor barbecue, place on the heated grates and grill for about 10 minutes until desired doneness is achieved.

If baking indoors, place into a shallow baking pan. Preheat the oven to 400⁰F. Bake, uncovered, for 20 minutes. Flip over the skewers and bake an additional 5-10 minutes until desired doneness is achieved.
